郭靓太煮私房菜 :手工批萨 Hand-Tossed Pizza

To meet our weekend theme ~ The Italian Feast....of course not only with the pasta rite?! Another challenge after the home-made sushi....we're going to be Pizzeria and bake home-made Pizza~!!!

Pizza Dough Ingredients:
~ 1 1/2 cups warm water
~ 1 packet active dry yeast / Instant Yeast
~ 3 1/2 cups bread flour (can use all-purpose flour but bread flour gives a crisper crust)
~ 2 Tablespoon olive oil
~ 2 teaspoons salt
~ 1 teaspoons sugar

Pizza Topping Ingredients: (Any other Optional ingredients)
~ Bell Peppers (thinly sliced)
~ Tomatoes (thinly sliced)
~ Onions (thinly sliced)
~ Mushrooms (thinly sliced)
~ Mozzarella cheese (shredded)
~ tomato paste
~ mayonnnaise
~ basil leaves
~ chicken pieces (BBQ Marinated and pre-cooked)

instant yeast

Bread Flour found at Cold Storage, Mid Valley

Steps 1: Making the Pizza Dough

1 1/2 cup water

sprinkle yeast on top of the water and set it aside for 10 minutes until the yeast is dissolved in water

5 minutes later.....


10 minutes later, yeast is completely dissolved in water
Stir to dissolve completely if needed.

measure flour to 3 1/2 cups

add in sugar, salt, olive oil and flour and mixed it with mixer

arghh...i don't have a dough hook for my mixer so i just slightly mixed the mixture with my existing hook
for 1 minute

mixed well the flour then pour in some olive oil and
turn the dough around in the bowl so that it gets coated with the oil

completed dough at 1st Stage (still very sticky)
cover it with plastic wrap and let is sit in a warm place until it doubles in size
about 2 hours or longer.

can see the dough is rising on it own ....a lots of air bubble in between

At completion of my dough at 1st stage, it was still very sticky. Summore, i didn't mixed the dough with a good dough hook, so now i'll need to hand-knead it.

Knead the dough and keep adding in bread flour until the dough is no-longer sticky and gives a smooth surface.


cut the dough into small pieces and set it aside for 2nd stage rising

grow bigger

and bigger now!
the dough is ready to bake!

Steps 2: Toss the pizza dough


sprinkle some bread flour on the baking pan


place the toss dough nicely on the pan

Steps 3: Prepare desired toppings




shredded mozzarella cheese @ RM23

Steps 4: Adding toppings to pizza

spoon on the tomato sauce and spread evenly

add tomatoes

sliced onions

slices mushroom

some basil leaves

sprinkle the top with shredded mozzarella cheese

sent it to the pre-heated oven at 200'C

15 minutes later.....tadaa!

Next.......

spoon on mayonnaise and spread evenly

add mushroom slices

chicken pieces

sliced onions

another coat of mayonnaise

with extra cheese for toppings *without additional charges...keke

bake for 15 minutes or until the bottom is nicely brown

tadaa~!

love the melted cheese topping so much~! Yummy!

My pizza dough turns out unexpectedly good. It was very crunchy and i think it would be even better if i was able to find cornmeal and sprinkle at the bottom of the pizza...keke.

Anyhow, this round consider very successful. The pizza still taste good even after few hours. Very good experienced ...again me n hubby enjoy it so much~!


郭靓太煮私房菜 :番茄干青酱意大利面 Sun-Dried Tomato Pesto Pasta

Ever since i've tried the Fusian Pesto Pasta @ Haven Cafe, it keeps floating in my mind ....find someday i gotta make this pesto pasta myself~!

Finally, me and hubby decide to make this weekend theme ~ 'The Italian Feast' !!!!!

Pesto Sauce Ingredients:
~ 2 cups of Basil leaves
~ 2 cloves of garlic
~ 2 tablespoon of olive oil
~ 4 pieces of sun-dried tomatoes
~ Parmesan cheese (optional according to personal liking)
~ 1 teaspoon salt
~ touch of pepper for seasoning

Pesto Pasta Ingredients:
~ Spaghetti portion for 2 person
~ 6 pieces of sun-dried tomatoes cut into small pieces
~ 4 tablespoon of olive oil
~ 30grams of pine nuts
~ 10 pieces of grapes sliced into halves

Grilled Chicken Ingredients:
~ 1 chicken breast
~ touch of garlic salt
~ 2 tablespoon of freshly grated black pepper

 Basil Leaves

 only wants the leaves....clean and drain it

 Pine Nuts ~ Very Expensive!
This box is RM23.90. Found at Cold Storage, Mid Valley

 very crunchy pine nuts add extra flavor to the pasta very well~!

sun-dried tomato

 Steps 1: Blending for Pesto Sauce

 2 cloves of garlic or 2 teaspoon of chopped garlic

add in 50grams of pine nuts

 add in salt and 2 cups of basil leaves and 2 tablespoon of olive oil
and 
BLEND! 

 
finally add the sun-dried tomatoes and continue BLEND!
until its silky smooth and keeps it aside for 5-10 minutes to let the flavor mixed up

Steps 2: Grilled Chicken

marinate chicken breast with some garlic salt and freshly ground black pepper

Grilled the chicken in oven until golden brown and then cut into slices

Steps 3: Cook Pasta

 Heat the pan with 4 tablespoon of olive oil, add in 4 tablespoon of pesto sauce

 sauteed the pesto sauce then add in the sliced sun-dried tomatoes

 add in the drained pasta and toss it well then dish up!

Sprinkle the top with some pine nuts and garnish it with the grilled chicken and grapes!
