郭靓太煮私房菜:Lemon Sponge Pudding

This is a very unique recipe ...as it bakes, the batter separates into 2 layers. The top layer becomes a light and airy sponge cake, yet underneath is a deliciously tangy lemon pudding. 

Ingredients:
~ 100 grams sugar
~ 30 grams butter
~ 2 eggs (separate to egg yolk and egg white)
~ 1 tablespoon vanilla extract
~ 1 tablespoon lemon zest
~ 20 grams flour
~ 40 ml lemon juice
~ 120 ml milk
~ 1/8 teaspoon cream of tartar

Steps 1: Preheat over to 165'C and butter 4 ramekins.

Steps 2: Set aside 2 tablespoon of the sugar to use when whipping the egg whites. THen in the bowl cream the the remaining sugar and butter until light and fluffy. 


Steps 3: Add in eggs. 1 after another and beat until incorporated.

Steps 4: Beat in vanilla extract and lemon zest. And add the flour and pinch of salt and beat until combined.

Steps 5: With the mixer on low speed, gradually pour in the lemon juice and milk. Mix and set it aside.

Steps 6: In another clean bowl, beat the egg white until frothy. Add the cream of tartar and continue to beat until soft peaks form. Gradually add the remaining 2 tablespoon of sugar and beat until stiff peaks form,


Steps 7: Gently fold the egg whites into the batter and carefully pour the batter into the prepared ramekins. The batter does not rise much during baking so can fill the ramekins almost to the rim.


Steps 8: Prepare a water bath. Carefully pour in the hot water until its halfway up the sides of the ramekins.

Steps 9: Bake for about 40 minutes or until the sponge cakes are golden brown and toothpick inserted into the cake portion comes out clean.
 the top is golden brown 

 Taste best when it served warm!

 optionally dust the tops of the puddings with icing sugar and dress with a dollop of whipped cream and fresh fruits. 

 But it thinks its already taste good enough with the fresh lemon fragrant. Luv this~!

郭靓太煮私房菜:Strawberries Crepe with Chocolate Syrup

There were still some fresh strawberries in my fridge...leftover from decorating my fruit tarts. Suddenly i come up with a quick idea to make this easy and yummy dessert in 10 minutes~!

Ingredients:
~ 1 egg
~ 100 gram flour
~ 50 gram water
~ 50 gram milk
~ pinch of salt
~ Fresh Strawberries
~ Whipped Cream
~ Chocolate Syrup

Steps 1: Mix the egg and flour

Steps 2: Gently pour in milk and water in batches. Stir Well.


Steps 3: Heat the pan and scope the mixture. Pan fry to both side golden brown. 

Steps 4: Place the sliced strawberries at a corner.

Steps 5: Squeeze in fresh whipping cream on top.

Steps 6: Fold over the crepe


Steps 7: Place another layer of strawberries on top


Steps 8: Add in whipped cream on top and fold over the crepe again.

Steps 9: Served with chocolate syrup.
 Great combinations of strawberries and chocolate with cream~!

郭靓太煮私房菜:Custard Fruit Tarts

After many times of baking cakes...now my new challenge is to make a tart ~ a beautiful fruit tart!

Crispy Tarts Shell Ingredients: (makes 2 tart shell)
~ 1 cube of butter (abt 225gram)
~ 100 grams of sugar
~ 400 grams of flour 
~ 1 tablespoon of vanilla essence 


Custard Filling Ingredients: 
~ 400ml of milk
~ 2 tablespoon of custard powder
~ 1 tablespoon of sugar

Dressing:
~ Fresh Rasberries
~ Fresh Blackberries
~ Fresh Strawberries

Steps 1: Preheat Oven to 200'C. Then cream the butter and sugar 


Steps 2: Add in 1 tablespoon of vanilla essence and mix well

Steps 3: Add in flour in 4 times....100 grams each time. Mix well the flour to become dough.

add in more flour if necessary to make a smooth dough

Steps 4: Get the baking pan and press the dough evenly on the pan and baked in the over for 15 minutes

make an even wall abt 3mm

Baked the pastry in oven for 15 minutes or until golden brown
let it cool down and meantime prepare the custard

Steps 5: Dissolved 2 tablespoon of custard powder in 2 tablespoon of milk


Steps 6: Bring the remaining milk to boil and add in 1 tablespoon of sugar. Stir well

Steps 7: Reduce the heat over the milk and pour in the custard mixture. Keep stirring until it becomes thicken and glossy shine.

Steps 8: Pour evenly over the tart shell and keep refrigerated until the custard is cooling and harden


Steps 9: Fresh fresh berries are ready to dress up my tarts

Steps 10: Sprinkle the top with icing sugar when serving...so it'll looks more presentable~!

Happy Birthday to Me

I had a very special birthday this year. Firstly i want to say "Thanks" to the Mr. Stomach Ache who had bring me big "surprise" of non-stop O Li Du since Friday night! 

Almost every half an hour im running to the toilet....bishh...plekkkk...prakkk

its very tiring~! huh...

Ok..back to the topic...another special moment of my birthday this year is that i don't exactly have a birthday cake...with candles

Ya it was all my fault...instead of 1 cake ....im very greedily to have many flavors of cake! hehe

hubby bought me 4 pieces of different flavor mille crepe ~ my favorite cake! 


 black forest flavor (*surprisingly good) & hazelnut flavor (taste like its with Nutella toppings)

 chocolate banana and the ultimate original flavor! Love it the most!

too bad that day the shop didn't prepare the flavor Rum & Raisin which was also my favorites too!

郭靓太煮甜品 : 意式布丁 Panna Cotta

Others than chocolate....now i found hubby also like the Panna Cotta too since our last visit to Spasso Milano. So today my challenge is to make the Panna Cotta!

 with just a few ingredients ...its unbelievable easy

Ingredients:
- 1 teaspoon of gelatin
- 1/4 cup of cold milk
- 1 pack of heavy whipping cream (250ml)
- 1/2 cup of Icing Sugar (or less sugar if you prefer less sweetened dessert)
- 1/2 teaspoon pure vanilla extract

Steps 1: Sprinkle the teaspoon of gelatin on top of the cold milk. And set it aside 5-10 minutes to let the gelatin dissolved.


Steps 2: Mix the icing sugar with the heavy whipping cream over low heat. Simmer it but do not boiled it.


 keep stirring until the icing sugar is completely dissolved in the cream

 Steps 3: Add in the cold milk + gelatin mixture into the cream and keep heating it over low heat until the gelatin is completely dissolved.


Steps 4: Pour the mixture into the glass thru the screen. To give the mixture even more smooth.

 pour into the glass and set it to chill in the fridge for 2 - 4 hours


Steps 5: After 2-4 hours ...the gelatin is already harden and became pudding style. Now we can decorate it with any fresh fruits. Im using my favorite's fruit...MANGO!

i cut the mango in cub and then press some of it thru the screen and get some mango puree.

 i first layer the mango puree on top of the pudding then only topped it with the cubed mango

chilled for another 30 minutes ...yum my Mango Panna Cotta Dessert on a Saturday night!
